Tapas: Padron Peppers, Salted

Ingredients

  • Padron peppers (Spanish: pimientos de padrĂ³n)
  • Olive oil
  • Coarse salt

Directions

  1. Rinse and dry the peppers
  2. Add about 1/4″ of olive oil to a medium skillet and heat on medium-high
  3. Place the peppers in a single layer into the skillet
  4. Saute the peppers, turning them regularly to coat and fry all sides until the skin blisters and very slightly browns (about 5 minutes)
  5. Scoop the peppers out of the skillet with a slotted spoon and drain on a paper towel
  6. Lightly salt the peppers; coarse salt such as sea salt is best, but table salt will work
  7. After allowing to cool very slightly, serve and eat — they are best while still warm
