Tapas: Padron Peppers, Salted
Ingredients
- Padron peppers (Spanish: pimientos de padrĂ³n)
- Olive oil
- Coarse salt
Directions
- Rinse and dry the peppers
- Add about 1/4″ of olive oil to a medium skillet and heat on medium-high
- Place the peppers in a single layer into the skillet
- Saute the peppers, turning them regularly to coat and fry all sides until the skin blisters and very slightly browns (about 5 minutes)
- Scoop the peppers out of the skillet with a slotted spoon and drain on a paper towel
- Lightly salt the peppers; coarse salt such as sea salt is best, but table salt will work
- After allowing to cool very slightly, serve and eat — they are best while still warm
